It’s Cold!

So cold that even our fool-hardy chickens elected to stay in the coop.

So cold that our storm doors froze shut (And yes- I know they definitely need to be replaced when the air condenses like that!)

So cold that schools canceled (Well, not all schools- our home school functioned just fine, thank you!)

So cold that when you blow bubbles outside they freeze and burst into tiny crystals before hitting the ground. (Hey- it was a fun science experiment- remember we did have have school today!)

But it still wasn’t cold enough to freeze spit before it hits the ground- at least that’s what my teen reported.

But it doesn’t matter what the temperature is outside- inside we are warm and cozy and thankful.

And still dreaming of green…

Mom and I were both thinking the same thoughts this week- how much we were missing green! She, however was a step ahead and is enjoying fresh herbs while I only dream of them…

This time of the year I “crave” green. Everything is covered with white outside, but inside there is the African violet, Christmas cactus, and several other indoor plants to help satisfy the “sight sense”.

But…

I want to taste it, too! So I add a head of leaf lettuce or some spinach to my grocery list along with green frozen veggies.

Now, while I’m very  thankful for the choices we have at the grocery stores these days to satisfy my “taste sense,” there’s nothing quite as nice as fresh homegrown food.

So several years ago Papa made a shelf that sits above our sink in front of the south window. It was an economical substitute for a “bump-out” greenhouse window I’d asked for! And it works!

This fall my cilantro sprouted again because of the warmth and wet weather so I lifted several of the plants and potted them. We have been eating from them for a couple of months. Last week I planted some seeds in the edge of the pot and we’re hoping that they will grow too.

Joining the cilantro on my shelf is a thyme plant, sweet potato vine to start next summer plants, two kinds of mint, basil and parsley. All were taken from the garden this fall.

It is luxury to me to be able to clip off some “fresh green” to top a salad or garnish our comfort food this winter!

Light and Tasty Potato Soup

With the Christmas season behind us and the evidence of all the goodies we ate showing around our waistlines, Nana offers a yummy lighter version to a winter time classic- enjoy!

Potato Soup

“The weather outside is frightful, The fire is so delightful, Let it snow, let it snow, let it snow……”

I was looking through the soup recipe file for something warm to make for lunch and discovered this is  “make-over” recipe that lightens the calories & fat, but still maintains the taste.

Perfect for after all of our holiday indulgences!

We are watching it snow while eating our Cheesy Ham “N” Potato Soup with a slice of Papa Jim’s Buttermilk Bread with some Crab Apple Jelly and a glass of apple cider on the side.

Cheesy Ham “N” Potato Soup
(A Light & Tasty Recipe)

2 ¼ cups cubed potatoes
1 ½ cups water
1 large onion, chopped
1 ½ cups cubed fully cooked lean ham
2 tsp. canola oil
¼ cup nonfat dry milk powder
3 Tablespoons all-purpose flour
¼ teaspoon pepper
3 cups fat-free milk
1 ½ cups (6 oz) finely shredded reduced fat cheddar cheese
1 cup frozen broccoli florets, thawed & chopped

In a saucepan, bring potatoes & water to a boil. Cover & cook for 10-15 minutes or until tender.

rain, reserving 1 cup liquid. In a blender or food processor process reserved liquid and ¼ cup cooked potatoes until smooth; set aside. Set remaining potatoes aside.

In a large saucepan, sauté ham & onion in oil until onion is tender. In a bowl, combine milk powder, flour, pepper, milk & processed or mashed potato mixture until smooth. Stir into ham and onion. Bring to a boil; cook & stir for 2 minutes or until thickened.

Reduce heat to low. Add the cheese, broccoli & reserved potatoes; cook & stir over low heat until cheese is melted & heated through.

Serve immediately. Yield: 7 servings

An Original Clay Nativity

Homemade Clay Nativity Please indulge me in just one more Christmas idea!

I know the holidays are over, the kids are back in school and the tree is packed up and put away, but this was such a neat idea! Just tuck it away for next year!

My sister-in-law came up with a great activity to make our family Christmas celebration special this year.

She brought a package of brand new Polymer Clay. Then one afternoon she called all the kids together and pulled it out. (Even the most reluctant artist was drawn in by the thrill of the new – untouched – clay!)

Together they listed the people and animals needed for the Christmas story and all of the cousins (and even some of the adults!) started creating. (I was in charge of the heavenly hosts!)

It was a fun and sometime silly time as several ages worked together to make the Nativity come to life in clay.

When we had finished, Grandma baked them while the kids played.

Later that evening while the men took turns reading the Christmas story, the children used the pieces they had made to act it out.

It was a fun way to make Christmas meaningful!

Luge

Luge I had to share this fun picture we took at my sister’s!

Her engineering husband has designed a luge that takes off from their patio.

Sledders start on a wooden platform and slide on sleds down a snow covered wooden ramp.

Then they slide on to a packed path that goes deep into the woods behind their house.

It’s extra fun when you hook you sleds together and go down as a “train”!

What a wet and fun afternoon!

And yes- I went down it, too, many times actually.  Even once with my sister, screaming and laughing all the way!
