Chocolate Ice Cream Layer Cake

Oh dear…the Chocolate Lady has been experimenting… again!

This time I was attempting to duplicate an Ice Cream Cake at Dairy Queen.

They look so simple – layers of cake followed by layers of ice cream – right?!

I can do that – right?!

Well – maybe not.

It sure tasted wonderful – but it didn’t look nearly as nice as the ones on TV!

I started with an Oreo cookie crust in the bottom of a springform pan.

When that cooled, I added a layer of softened chocolate ice cream and put the pan in the freezer. An hour later I added a layer of softened vanilla ice cream and refroze the pan.

I repeated this 2 more times until I got to the top of the springform pan.

I should have stopped there and just frosted it with Cool Whip – but no – I had to get creative.

I whipped up a chocolate sauce recipe – thinking that it would be the perfect topping. It tasted wonderful as I licked the spoon – but when I went to put it on the cake it became a gloppy mess! It never stuck to the top of the ice cream and slip off in little piles.

Oh dear!

I refroze it thinking (alright – hoping!) that it would stick. But alas – it didn’t work. The chocolate glaze remained a mud slick.

To serve the cake, I removed the side of the springform pan and cut the cake into wedges – then carefully pressed the chocolate glaze on the top before plating.

Everything tasted wonderful – you just had to overlook the fingerprints in the chocolate mud slide!

When the Chocolate Lady makes this dessert again – I will frost it with Cool Whip and make cute chocolate drizzles on the top with fudge sauce from a jar!

I may even get adventurous and trade out the ice cream flavors – wouldn’t a layer of coffee ice cream be delish with the chocolate? Or maybe a strawberry layer?

I sure do love to experiment – especially when it involves chocolate!

She’s Gone Home

A part of me still can’t believe she’s gone.

She was doing well and fighting this cancer – then with out warning a blood clot took her life.

Absent from the body, present with the Lord.

Her going sent a shock wave through our small church fellowship. Yesterday was a day of grief as we sat together and remembered her.

The tears flowed freely as we heard story after story of all the things she had done – all the needs she saw and quietly met. Nothing big or newsworthy – just faithfully serving – touching life after life.

She wasn’t one to be in the limelight. She wasn’t one to teach, or sing, or be on stage. She would most likely be washing dishes in the kitchen, reading to a friend in the nursing home, or hugging someone while speaking a few words of encouragement.

You see – she loved.

She loved her Lord and that love radiated from her. She wore her heart on her sleeve – and freely shared it.

She loved her husband, her daughters, and all those grandchildren – passionately.

And she loved us all – especially our children. When she heard a baby cry in church she would smile and say, “I love that sound – it means the church is growing!”

Our stories, our lives, and our needs were important to her. There wasn’t a person in the church – from the youngest to the oldest – who didn’t know this because she showed us in so many ways.

She was a prayer warrior.

She was my prayer warrior.

I would share a request. She would squeeze my hand and say “I’ll be praying.”

And she did.

She prayed me through every Christmas program, every VBS, and every little crisis that seemed overwhelming. She prayed my children through airplane flights, illness, and attitudes.

She prayed.

She would ask how things were.

When I answered, “Not so good.”

She would pat my hand and say “I’ll pray harder.”

And she did.

We had two special prayer requests that we committed to pray for together. She went home before seeing either of them answered.

I’ll keep praying for them – but on my own now.

It’s hard to believe that she will never again reach over and give my hand a squeeze or a pat and remind me that God has everything under control.

Yes, God does have everything under control.

Even though our hearts are sore with grief – we are rejoicing that right now she is sitting at the feet of Jesus – worshiping. No more pain. No more suffering.

She’s gone home.

While we will miss her sweet presence – we are so thankful for the legacy she left us.

In her own quiet, unassuming way she taught some really big lessons – how to serve faithfully, how to love extravagantly, and how to pray fervently.

As one gal said so beautifully yesterday, “She was the woman I wanted to grow up to be.”

Amen.

Peanut Butter Blossoms

chocolate peanut butter blossomsI love finding a bargain!

I was shopping with the girls in our local Pamida when I saw two grocery carts full of “reduced for quick sale” items – including several bags of dark chocolate Hershey kisses. I grabbed all there were for just $1 a bag!

A good buy like that deserves to be rewarded – so we made these traditional – and so yummy Peanut butter cookies.

Peanut Butter Blossoms

48 Hershey’s dark chocolate kisses (with wrappers removed)
3/4 cup peanut butter
1/2 cup shortening
1/3 cup sugar
1/3 packed brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
granulated sugar

Beat peanut butter and shortening with an electric mixer on medium speed. Add 1/3 cup granulated sugar and 1/3 cup brown sugar. Cream together.

Add egg, milk, and vanilla; beat well.

Stir together flour, baking soda, and salt. Gradually beat into the peanut butter mixture.

Shape dough into 1 inch balls. Roll in the additional granulated sugar before placing on an ungreased cookie sheet.

Bake 8-10 minutes or until lightly browned. Immediately press a chocolate kiss into the center of each cookie. Cool completely on a wire rack.

Home Made Angel Food Cake

Eggs! Eggs! Eggs!

My little ladies in the chicken coop are in peak production right now and at last count I have 10 dozen eggs in my fridge – with at least another dozen being laid as I type.

It’s time to dig out every recipe I can that uses an abundance of eggs!

Our all-time favorite is home made angel food cake.

But then – it’s been a family favorite for years! My mom would make an entire fresh angel food cake to take on the picnics she and dad used to go on when they were dating.

And their wedding cake was angel food! She baked the bottom layer in the wash tin with a jar in the middle! (I can only imagine how many eggs that one used!)

If you have never had an angel food cake  “from scratch” – you are in for a treat! It is very moist with a  light, fresh taste – so worth the effort!

Angel Food Cake

1 cup cake flour
1- 1/4 cups powdered sugar
1- 1/2 cups egg whites (about 12)
1- 1/2 teaspoons cream of tartar
1/4 teaspoon salt
1- 1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 cup granulated sugar

Lay out 2 sheets of waxed paper on the counter.

Measure the cake flour and the powdered sugar into a sifter and sift it on one of the waxed papers.

Pick the waxed paper up and pour the sifted mixture back  into the sifter and sift it on to the other waxed paper.

Repeat one more time. Set aside.

Beat the egg whites with the cream of tartar, salt, vanilla, and almond extract until they have soft peaks but are still glossy.

Beat in the sugar 2 tablespoons at a time. Continue to beat until stiff peaks are formed.

Sift about 1/4 of the flour mixture over the egg whites and slowly mix it in. Repeat until all of the flour is mixed in.

Pour into an ungreased  10 inch tube pan.

Bake at 375 degrees for about 30 minutes.

Remove from oven and invert the pan immediately. Let the cake cool completely before removing it from the pan.

My family also loves this in the chocolate version.

You might notice there is no frosting on this cake – I’m a purist like that!  I’ll frost the death out of every other cake – but a home made angel food is best adorned with fresh fruit and whipped cream.

Fragrance

Have you ever noticed that when you step outside in the winter all you smell is cold?

Lilacs

That’s why I really love all the smells of spring.

Fresh cut grass.

The lilac bush in full bloom.

The apple trees bursting with blossom.

The lily of the valley hiding in the grass.

The hyacinth that perfumes the garden.

There’s a tantalizing fragrance in the air that excites us! It draws us outside, compels us to open the windows and breath deeply.

It’s a fragrance that we quickly recognize as spring – it smells alive.

I was reading in 2 Corinthians the other day when this verse caught my eye:

Apple Blossoms2 Corinthians 2:14-15  Amplified

But thanks be to God, Who in Christ always leads us in triumph as trophies of Christ’s victory and through us spreads and makes evident the fragrance of the knowledge of God everywhere,

For we are the sweet fragrance of Christ which exhales unto God, discernible alike among those who are being saved and among those who are perishing”

How incredible is that!

In Christ, we’re walking in a never-ending victory parade! And – everywhere we go we give off a sweet fragrance that is full of life!

Now that’s how I want to live.

I want a life that is open to Him and fragrant with His knowledge.

I want a life that is a beautiful aroma that will draw people to the Lord.

I want to be  an enticing perfume that compels people to open the windows of their hearts and drink deeply of the the sweetness of my Savior.

I want to be that sweet fragrance that people recognize as salvation – the exquisite scent of life.
